[h4]a.  Pool parties can easily turn into dinner parties.  Here’s a stellar recipe for Romaine Salad!  Greens on the grill!

GRILLED ROMAINE SALAD
serves 6-8
4 hearts of romaine, halved lengthwise
1/2 cup walnuts, coarsely chopped
4 oz goat cheese, crumbled
1/2 cup pitted cherries
2 tbsp olive oil
2 tbsp Champagne or white wine vinegar
1 tbsp fino sherry
1 tbsp lemon juice
1 shallot, finely minced
1 tsp mustard
sea salt & pepper
Combine the dressing ingredients in a small mason jar. Season liberally with s&p. Seal and shake. Refrigerate until use.
Preheat a grill to medium-high. Rinse and pat dry the lettuce. Cut hearts in half lengthwise and brush surface with olive oil. Grill, turning occasionally, about 4 to 5 minutes or until lightly crispy. Remove from grill and chop. Toss with dressing, nuts, cheese and cherries. Serve immediately.  Note: Romaine shrinks considerably when grilling. I sometimes supplement the salad with a heart or two of non-grilled lettuce for more bulk.
b.  Floaties.  For safety.  Beer Margaritas are for the body, soul, mind, and spirit.  Yes!

The Trailer Trash Margarita (or Longneck ‘Rita)
Sometimes the foodie in you needs a vacation. For lazy days by the pool, I prefer this old “family” recipe (apparently a priest made these for my mother.  Amy Sedaris also endorses it in her hospitality book
I Like You). This margarita has a different effect than the standard tequila-only brand, creating a mellow buzz that is just right for an afternoon in the sun. Start by emptying 6 oz (1/2 can) of frozen limeade concentrate into a blender. Save the other half in another container for the second round! (There will always be another pitcher… be warned!)

Fill the empty concentrate can 2/3 with tequila of your choice (don’t waste the fancy stuff on this recipe). Fill the last 1/3 with triple sec. Pour in a bottle of light Mexican lager beer and top the blender with lots of ice. Pulse until smooth and watch for the froth (I sometimes add the beer slowly as I blend so as not to overflow). Pour in Schlitz glasses, garnish with lime and enjoy the float down the river!

c.  Why not drink your flowers and veggies!?  Here’s some refreshers of the non trailor trash variety.

Hibiscus Lemonade
Add this syrup to bump up your favorite lemonade recipe.

2 cups water
2 cups sugar
1 cup dried hibiscus flowers (called Jamaica at Mexican markets)
In a saucepan, bring water and sugar to a boil.
Turn off the heat. Add hibiscus flowers. Stir well and set aside to steep. Once completely cool, strain liquid into a bottle and refrigerate until use.

Cucumber Vodka

1 large English cucumber, peeled and sliced
1 750ml bottle of vodka

Combine cucumber and vodka in a large container, seal tightly and set in a cool, dark place for 3 days and up to 2 weeks (any longer and the vodka will pick up the bitter flavor found in a cucumber’s peel). Strain, chill and use in your favorite summer cocktails. The “pickled” cukes strained out can be used as a cocktail garnish or tossed into a boozy fruit salad.

    I loved you podcast. It is so true about the bathing suit issue. I love relaxing in the pool, so I typically go in. We have a pool and most people join in. If people want to jump in, in their cloths. I can always dry them after. I typically say everyone will be in the pool, come prepared :)
    When we are invited to a party I typically have suits and towels in the car, just in case. After all living in So. Cal there are many pools.
    As far as the food, I’m all for doing the food ahead of time, so that I can enjoy everyones company.
    I love beer margaritas, I make them a bit different. But they are always a hit. I like to add blue Curaçao, makes them pretty and fun, very easy too.
    Oh Cotija is one of my favorite cheeses! I will have to try that on grilled romaine.

    cold fried chicken! great for pool parties and you can do ahead…..we have a great picture of our pug on a boogie board in the comal river—he was super still because he knew he would sink like a stone if he rocked the boat!
    cheers with my Pimm’s cup! it’s 99 degrees in TX as I write this so we always appreciate a pool party :)
